[Tasting Notes]
A fresh and dignified Junmai Daiginjo.
It has a good balance of refreshing acidity, light and elegant sweetness, and gentle umami, with a hint of sweetness like apricot curd or white peach compote, and a refreshing coolness like green grass.
When tasted in a small wine glass, the acidity and umami are intertwined with the slight effervescence and spread more pleasantly in the mouth. It is a versatile sake that can be paired with salmon carpaccio and other dishes as if it were a white wine.
