About The Brewery

About The Brewery

In 2023, the company will become the first brewery in Japan to brew all of its sake from Omachi. While the style is simple, using a single variety, the potential of Omachi is brought out to create a variety of flavors with diverse expressions. At the helm are Soichiro Tsuji, the seventh-generation brewer, and his sister Maiko Tsuji, the first female toji in Okayama Prefecture. Another attraction of Gozenshu is its unique "Bodai-moto" style of sake making, which Gozenshu was the first brewery in Japan to reintroduce. The brewery aims to sublimate the traditional method and to make all of its sake with "Bodai-moto" by 2026.
