The place said to be the birthplace of sake is a temple called Shorekiji in Nara Prefecture. Following the example of Shinto-Buddhist syncretism, temples also began to make sake using rice. The rice was grown in the manor and monks made it, so it was called "Soubo Sake". Shorekiji was the leading temple among those who made Soubo Sake. As they produced large quantities of sake, their sake brewing techniques also improved. The sake brewing techniques of Shorekiji were innovative in the Muromachi period, and are recorded in the ancient document "Goshu no Nikki". These techniques were passed on to "Nanto Morohaku". This is the origin of sake brewing.

Nara sake, which can be said to be the origin of sake, is mainly rich, sweet sake with high levels of acidity and sugar. We hope you will experience the history of the exquisite local sake brewed in the birthplace of sake with your tongue.
