Basic introduction of Brewery

 

Umenosu Sake Brewery was founded in 1893 (Meiji 26) as Yoshida Kumatora Store, and was officially established as Umenosu Sake Brewery Co. in 1950, and began brewing ginjyosu under its own brand name in 1979.

In 2002, Umenosu began exporting to the United States under the Small and Medium-sized Enterprise Business Innovation Support Act. Since then, its products have gradually entered the markets of Hong Kong, Taiwan, Australia, Singapore, Europe, Brazil, and the United Arab Emirates, etc. In 2017, Umenoyado established UMENOYADO USA to start the sales and promotion of fruit wines in North America.

Product Series

 One of its classic products, Ume-no-Shu's ume plum wine is made using Japanese-grown green and ripe ume plums, which are matured for three years to perfectly blend the aroma and fresh flavor of the plums into the sake. Each 1,800ml bottle of plum wine is equivalent to soaking about 15 plums.

Brewing process

Umenosu Sake Brewery retains traditional techniques in the brewing process while actively introducing innovative technologies. For example, they use the traditional “Kimoto & yamahai” brewing process, which gives sake its unique, nostalgic flavor. The brewery also utilizes automated analyzers and precise hand-mixing procedures to ensure product quality.

High-quality water source

Located at the foot of Mt. Katsuragi in the Nara Basin, Sakuzo is brewed with fushigi water from the Katsuragi mountain system. This water is pure and rich in minerals, providing the basis for brewing high quality sake.
