About The Brewery

The brewing water is natural water with a temperature of about 7 degrees Celsius, ideal for sake brewing, and originates from a spring in the Daisetsuzan mountain range, which is capped with snow for many years. Sake rice is made from Hokkaido sake rice produced by trusted growers who know each other, and each bottle of mash is carefully brewed using traditional handmade methods to produce a small-batch, high-quality junmai sake. Not something extreme, but just plain good local sake. We aim to brew sake that will please more and more people, and to promote Hokkaido's regional brands to the rest of Japan and Made in Japan to the world.
