This natural process in Kentucky is the primary condition for the birth of Brand. Preparation begins in autumn and continues through winter.Brand is prepared from autumn through winter. This is because the temperature of the spring water used for preparation rises too high in summer, making fermentation unstable. Meticulous care is also taken with the Brandt poured into barrels and stored in the warehouse. Slowly reaching its peak of maturation over many years produces wonderful quality.
