Founded in 1881, the Machida Sake Brewery, established by the fifth generation in addition to the 140-year-old Seiyo Sake Brewery, now ships its products nationwide. The brewery's motto is to brew fine, pure sake by hand, and all the sake is carefully prepared in small batches. The well on the premises is fed by the Tone River system. The brewery uses this soft water to brew its sake, which is characterized by the umami of the rice and the clean taste of the sake. The first brewer named the sake "Seiyo" (meaning "pure and clear"), and "Seiyo" became "Kuchi-hen" (meaning "mouth") because the sake is served by the mouth.
