Shochu is a traditional distilled spirit made in Japan. The term “Shochu(燒酎)” can be dated back as far as the Yuan Dynasty in China, where the word “Sho(燒)” describes the bitterness and strength of the alcohol and “Chu(酎)”, an ancient Chinese word, refers to liqueur distilled more than twice during the distilling process. The alcohol content of shochu is usually above 25%, which is higher than sake or red wine. There are even some with over 35% of alcohol content, which usually used for cooking or cocktail mixing.
