Echigo-Yuzawa, located in the Uonuma region of Niigata Prefecture, is an area of heavy snowfall that was the setting for Kawabata Yasunari's Snow Country.
The snow that falls in winter slowly melts in spring and is absorbed underground over a long period of time. The soft water, which has been purified of impurities during its long journey, is nature's perfect blessing for sake brewing. We continue to brew sake in the snowy country environment, which is blessed with water pumped from our own sources, selected raw materials and sake brewing.
